Grilled Bone Broth BBQ Double Smash Burgers

Ingredients
16 oz ground beef (70-80% lean)
Salt
Pepper
Cumin
Paprika
Bacon grease (or canola oil)
American cheese
Pickles
Red onion
Martin’s Famous Potato Rolls
Instructions
Prepare your burger spice mix by combining 1 tablespoon coarse salt, 1 tsp pepper, 1 tsp cumin, and 1 tsp paprika. Mix well with a spoon or with fingers.
On a large grill, prepare charcoal according to instructions, then spread out across a 18”-24” area.
Place a large, cast iron griddle (flat side up) on the grates over the charcoal. Cover the grill and allow the griddle to heat up, approximately 5-10 minutes.
While the griddle is heating, prepare the patties by rolling the unseasoned ground beef into 8, 2oz balls.
Spread a thin layer of bacon grease across the griddle.
Place the balls of beef on the griddle, then, using a cast iron press or a stiff metal spatula, press down very firmly to spread the meat as thin as possible. Allow to cook for approximately 45-60 seconds each, seasoning this side generously with your burger spice mix.
After approximately 45-60 seconds, carefully scrape and flip the patties from the griddle with a stiff metal spatula. Add one slice of cheese to each patty immediately, then cover the grill and allow to sit for 30 seconds. Any overhanging cheese that hits the griddle should start to crisp and brown.
Stack the patties as many as you’d like (doubles recommended), then transfer directly to a Martin’s Famous Potato Roll.
Top with pickles, thinly-shaved red onion, and Carolina chicken bone broth BBQ sauce.
